I have a soft spot for snacks. If it was up to me, I would be eating snacks all day and not even have any full meals. However, we all know that is not very good for your health. Specially since the snacks I often have on hand aren’t always very healthy.

Recently, I have started exercising more regularly again. I do not enjoy exercising and therefore it has always being an on and off thing for me. I have realized though, that with age come responsibility and if I want to be healthy and look good, I have to start making some sacrifices. One of those sacrifices, involves exercising regularly.

I am not sure why, but exercising rather than give me more energy as most people often say it does for them, to me it actually makes me even more tired. This is one of the main reasons I don’t enjoy exercising. While, I do feel better physically when I engage in daily exercise, my body and mind tend to crash in the middle of the day on the days I do any type of workout. Isn’t that weird? Does that happen to you? Do you know why? Tell me in the comments below because I would really like to know and possibly find a solution.

Anyhow, because I get so tired I figured it would be a good idea to have a snack that is high in protein right after my workouts to try and keep me energized longer. So, I made these yummy Tropical Energy Bites!

If there is something that can actually keep me motivated to exercise daily that is food. This snack is so good it actually makes want to do my workouts just that I can have it later.

These tropical energy bites are high in protein, packed with nutrients and vitamins, and amazingly delicious. To make them, I used rolled oats, almond butter, honey, tropical dried fruit and my favorite protein powder, Kura! I use Kura in all of my smoothies and other recipes like this yummy pancakes or this fun overnight oats because it gives me the piece of mind to know that I am getting the nutrients my body needs as I am always on-the-go.

High-Protein Tropical Energy Bites

Servings: 16

Ingredients

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1/3 cup almond butter
  • 1/2 cup tropical dried fruit medley
  • 1/2 cup dried mango , finely chopped
  • 1/4 cup honey

Instructions

  • In a large bowl, mix all ingredients using a wooden spoon until well combined.

  • Scoop a heaping tablespoon of dough into your hands, roll into a ball and place on a cookie sheet layered with parchment paper. Repeat.

  • Refrigerate for about 30 minutes and transfer to a zip-lock bag.

Notes

Keep in the refrigerator for up to a week.
