Parsley and Garlic Chicken with Potatoes is one of my favorite family recipes.
I learned how to make parsley and garlic chicken with potatoes from watching my grandmother cook as a kid. It is a simple traditional meat & potato family dish that is deliciously simple to prep.

- 6 Chicken Legs
- 6 Chicken Thighs
- 8-10 Peeled Potatoes
- 3 Tablespoons Extra Virgin Olive Oil
- 2-3 Tablespoons Parsley Flakes
- 6 Cloves Chopped Garlic
- Granulated Garlic
Before you begin, preheat your oven to 325 degrees.
Next, mix the parsley flakes, chopped garlic, and last tablespoon of olive oil in a small bowl. Set it aside.
Now get the chicken and remove all the skin. Put the chicken aside.
Get a roaster with a lid or a dutch oven and place it on your cook top over medium to medium high heat. Add 2 of the tablespoons of olive oil into the roaster. While that is heating, begin slice each potato in half length wise and then across in 1/4 to 1/3 inch slice until all potatoes are sliced. Add sliced potatoes into the roasting pan. Add salt, pepper, and granulated garlic to taste stirring occasionally. Continue stirring the potatoes occasionally until they start to brown slightly. Remove from the heat and push all the potatoes to one side of the roaster.
Place chicken in roaster on the open side. Spread the parsley and garlic mixture over the chicken as evenly as possible. Place the lid on the roaster and put it in the oven for 2 hours.
Serve with a favorite vegetable and enjoy!
